What does the food code require?
Florida's food rules for restaurants are based on the FDA Food Code, which says food on display has to be protected from contamination. Packaging, display cases and "food guards" on counters, service lines and salad bars are the accepted ways to do it (section 3-306.11). Inspectors check for it, and open food without one gets written up.
There's no single magic height. What matters is that the glass sits between customers and the food on every side they can reach. We build to the line your plans and your inspector call for, and we'll talk it through with your GC before we cut.
